I've become so interested in the RE series that I'm gonna start playing them. Last time I played one was way back when RE 2 was on PS, and I was just to scared then. But now, I was wondering, should I play the games in their release order on gamecube (1, 0, 2, 3) or they're real order (0, 1, 2, 3)?

it depends. on one hand it would be better to play them 0 1 2 3 because you'l see the story being layed out better. but on the other hand, id probably go 1 0 2 3 because theres things in 0 that can seriously spoil things in 1. so def. go that way

Go in the 0, 1, 2, 3 order. It's way better. I'm am doing that now. You find out what kind of these are in the nex game.

definetly 0,1,2,3,4 it tells and makes you understand better. Resident Evil 0 is the first to start with then Resident Evil 1 to get things started, Resident Evil 2 to go even further, and Resident Evil 3 Matrix way you will find out how far the rabbit hole go's.

i would say play REmake then Zero and follow from there.

The only problem I see with beginning with Zero is that the game assumes the player knows some of the storyline from the previously-released games, making reference to their events right at the beginning. I'd probably go with their chronological order, though.
