Nintendo: Mario, Zelda, Metroid, and several dozen other things but it's too much to list.
UbiSoft: PoP series and a few other choice titles that are pretty damn good.
EA: Sims, Madden, Need for Speed.

Welcome to the community Treesaj.
Nintendo - No explanation needed.
A listing of many others that hold their own for second place.

Nintendo has produced the greatest games of the last twenty years, no question, so they're tops. Running in second includes Rare (from the bad ol' days), Squaresoft, Konami, Rockstar, Activision, and Insomniac.

Nintendo never fails anything. You just cant beat 'em.
Ah yes, Rare. They made some whoppers back in the day. Only yesterday i got my hands on the Banjo Kazooie soundtrack.
and then HAL. Smash bros is the greatest achievment of man.
I do not pic a company because of a game I like, but rather from their track record, their 'signature' if I may.
by that, two immediately comes to mind (with the reason why):
Capcome: king of A.C.T.I.O.N !
Konami: technical wounder.
PS.
Square-Enix: Never fails to dissapoint in the RPG area

1. Treasure
Gunstar Heroes, Alien Soldier, Guardian Heroes, Radiant Silvergun, Sin and Punishment, Ikaruga; the list of instant classics this company has produced is nothing short of incredible.
2. Sega's (current and former) in-house dev teams (Overworks, AM2, Hitmaker, Sonic Team, UGA) based on everything from their classic Shinobi and Streets of Rage games to Jet Set Radio, Virtua Fighter 4, and Rez
3. Konami.
Contra. Castlevania. The only two franchises (bar their 3D incarnations) any real gamer needs.

Well of course its Nintendo no one even competes if Nintendo were the only game company I could live just playing their games and systems because everything they make is of high quality.
Phoenix

Nintendo is a no-brainer, but besides them, Namco, Square-Enix and Sega are my favorites. I used to love Rare, but they suck now.

I would have included Enix in my list as Square-Enix, but the only thing Enix has produced that was worthwhile in the last twenty years was Dragon Warrior. Sorry. Cult dynasties from the late 80's/early 90's don't count.

There are several companies that I respect and enjoy their work, but nobody ranks as high as Nintendo. The near immortality of their franchises speaks volumes. Not many franchises continue going strong ten, fifteen, or twenty years after their creation, and many of those rare long-term success stories come from none other than Nintendo.
Runners-up might include Square-Enix, Blizzard, Rockstar, Capcom, and Konami.
I gotta add Sega. they made a truck load of great games I I positively loved the Genesis.

Nintendo has made every type of game I can think of, and they are all at least decent. Earthbound, Zelda, Mario... Excellent.
Sega is good now, but they used to be great. Phantasy Star 1-4, Sonic 1-3. Phantasy Star Online sucks. :P
Konami, perhaps even moreso than Nintendo, has done everything and everything well. Gradius, Parodius, Castlevania, Metal Gear Solid, Suikoden (Here's to hoping Suikoden 5 is as good as Suikoden 2), Dance Dance Revolution, Beatmania, Contra, Sparkster- you can't lose with Konami.
Square-Enix might have been on this list for games like Final Fantasy 6 and Chrono Trigger, but they haven't made a game I liked in years.
Only recently have I been looking more at Capcom. I really enjoyed Resident Evil 4 and killer7.(which was only published by Capcom)
Nintendo, Sega, Square-Enix, Capcom and Bungie.
