The last one I bought was Ridge Racer V, at which point in the series I had pretty much lost interest in the games. The last time I really enjoyed them was Ridge Racer 64. (I never got RRV until a few years into the PS2's life.) I played demos of Ridge Racer 6 and just didn't care for it any longer.
So, simply based on when I last enjoyed the series, though people are going to unanimously oppose it:

R4 is fantastic.
I actually loved 6 and Racers PSP as well. I'd probably enjoy 7.

All the Brits love Rage Racer. I've only dealt with the Playstation RR games, so it's R4, RV, and R7 for me. Out of those it's a tie between R4 and RV. As far as BGMs go, R4 and RV tie again. They both have excellent tracks to race to. I could go on, but then my post would turn into a list thread.
Now, as far as the racing itself goes, R7 destroys the other two for obvious reasons. Drafting, Nitrous, and Ultimate Charging put the racing on a whole new level in R7. I choose R4 for an overall package. That and I miss the Micro Mouse Mappy team.;_;
I dunno. Ridge Racer and Ridge Racer Revolution have a fond place in my heart because I was so young and the leap from Megadrive to full 3-D Playstation was immense. You basically had an arcade machine in your house. Rage Racer revolutionised the series a little bit, the graphical style seemed grittier and overall more serious. But at the same time it retained it's classic arcade handling. Upgrading the cars and saving up to purchase new ones was quite addictive, the noticeable difference in speed in the later stages was fantastic.
RR4 was completely overshadowed by Gran Turismo at the time for me so sadly I didn't look into too much, still a classic game by all means. After that though Ridge Racer has sadly felt a little long in the tooth. Good for a 10 minute blast by all means, but it just feels like the same old.
What I love about the Ridge series though is it's soundtrack. So many great tracks that bring back a lot of memories.

Alot of people over here think ridge racer is unrealistic as they believe its not possible to make a car drift round corners like that

well my first RR was the one that launched on the psp. Its ok but it gets old

The first RR I ever played was the PSP one so I say that's the best. I tried playing R4 and it's way too slowwww...as in the sense of speed. So yeah RR for PSP.
