I just watched LA Confidential today for the first time, that movie's awesome!
I'm not sure if you watched Kingdom of Heaven or if you liked it very much, but the Director's Cut (which is like 3 + hours long) is amazing IMO, and Harry Gregson-Williams did the music so you can't go wrong there ;)
In one of my classes this semester we also watched The Lives of Others (German film) and The Diving Bell and the Butterfly (French film), both of which were very awesome (I liked The Lives of Others more, I think)

Fight Club!
Natural Born Killers. Its kinda like a Bonnie and Clyde, only.....more violent. Its mostly a film to trip balls too, but it does make some good points about humanity.
Its got a good cast too:
Woody Herralson
Juiliet Lewis
Robert Downey Jr.
Tommy Lee Jones
Rodney Dangerfield
It was written by Quinten Tarentino, so you cant go wrong.

Most of these are pretty obvious, but if you haven't already seen the obvious ones, cut your shame short.
Kiss Kiss Bang Bang
Ultra cool neo-noir with quick dialogue and restless energy.
Reservoir Dogs and Pulp Fiction
Two modern classics of pure entertainment.
Sin City
Hyper stylish thrills.
Battle Royal
A class of Japanese school kids forced to kill each other on an island.
Let's hope the American remake never happens.
City Of God
Exciting Brazilian gang life.
Goodfellas
I always forget just how great this film really is, until I'm rewatching it.
Fargo
One of the Coen brothers' finest moments.
An exquisite blend of drama, comedy and beauty.
Chinatown
Classic noir. Perfect film.
Serpico
Sidney Lumet is undeniably great.
Compliments 'Dog Day Afternoon' perfectly.
As well as the already mentioned 'Memento' and 'Fight Club'.

FO' FUCKIN' SHO'! Possibly my favourite movie ever, not sure why I didn't mention this given the fact that I have a quote from it in my signature...

Yuuuup!
Following was Christopher Nolan's first film, and is definitely worth watching, it's quite short (given the fact that it wasn't funded by any studios that's completely forgiveable). The Prestige is also absolutely amazing.
GATTACA -- I just re-watched it yesterday and I absolutely love it. Makes you feel like anything is within your reach, and not in a cheesy way. Wonderful dialogue and amazing story.
Hot Fuzz and Shaun of the Dead -- can't go wrong with either of these, they're hilarious and have great action (Hot Fuzz especially).
Heat is great too, hopefully you've seen that one already :-p
I also love Collateral, I realise not everybody likes it as much as I do, but I think it's absolutely fan-frickin'-tastic.
And also in case you haven't already watched it, Children of Men is definitely one of my favourite movies. Intense, beautiful, and it has Michael Caine in it!
Layer Cake is really cool, too :)

I didn't list Children Of Men or Brick initially because I didn't think they fit with the movies you listed to give an impression of your tastes, but they are both brilliant films. So is The Host.
And kudos for being a fan of Spaced!
It's my favorite TV show of all time.
Road To Perdition!
In Bruges!
Cinderella Man!
Debby Does Dallas!

You should NEVER forget how awesome The Dude is... NEVER!
What a cast too.
I third the recommendation of "In Bruges". Pretty good movie.

No Country For Old Men... hilarious!
Rent/buy the boxed seasons of Arrested Development.
If you want comedy one you should pick up is: Fear of a Black Hat
its exactly like Spinal Tap, only its with a rap group called NWH (Niggas With Hats). This movie is full of funny.

A classic comedy I didn't think I was going to like (but ended up loving) was Annie Hall. It's a Woody Allen film, and was the first film of his I've seen, so I didn't know what to expect, but it's a wonderful movie overall and had some really funny parts (early random Christopher Walken appearances are always welcome lol)
If we're also including TV stuff I whole-heartedly second the notion of Arrested Development, I love that show to death. Extras is also a personal favourite of mine (though you've probably heard more about that show than I ever did considering you live in the UK)
If you like the Pegg/Frost/Wright movies, then you'll probably like Pineapple Express, that movie had a lot of great laughs IMO (without being a "pot movie", it had good dialogue and character interactions).
